Bloody Maria Chicken Cacciatore

Our Chicken Cacciatore is a versatile hearty meal that's easily frozen for quick leftovers! Check out the stove top recipe AND the slow cooker recipe. 

Bloody Maria Chicken Cacciatore

Chicken Thighs 2 pounds 
Bloody Maria Mix ~ 1/2 jar 
Onion  1 small 
Garlic Cloves 4 small
Carrots 2 - diced
Pepper 1 - red or yellow - diced
Thyme  1 tsp dry or fresh
Olive Oil 1 tbsp
Salt & Pepper
*Olives 1/4 cup (optional)

 

Season chicken with salt & pepper. Sear the skin of the chicken thighs in a skillet on medium heat in olive oil.  Cook just enough to brown the skin on each side. Set aside. 

Stove Top:  

Saute over medium heat in olive oil the garlic, thyme and veggies until onions are transparent.

Add seared chicken to pan. Cover with Bloody Maria Mix. 

Cover and simmer on low heat, stirring occassionally, for 30-40 mins until meat is falling off the bone. 

Slow Cooker:

Add seared chicken, garlic, thyme, diced veggies and Bloody Mary Mix, using enough to cover everything in pot.  Cook on Low for 8 hours.  Medium for about 4 hours. High for about 2 hours - until meat is falling off the bone. 

Add olives during the last 10 minutes.  Garnish with herbs.  *Great freezer friendly meal.*
