Bloody Maria New Mexican Rice

If you're looking for a rice recipe with that New Mexican Chile KICK... look no further!  This may take a time or two to figure out the exact liquid measurements, but eating the experimental leftovers is never a problem! 

Bloody Maria New Mexican Rice

Rice 1 cup
Bloody Maria Mix* 1/2 cup
Oil 2 tsp
Frozen Peas & Carrots 1/2 cup

1. Toast rice in oil until the color changes to a light brown as you keep stiring so it doesn’t burn. 

2. Add water per the recipe depending on what rice you are using.  

*Omit 25% of the water and add Bloody Maria Mix. If recipe calls for 2 cups of water, add 1 1/2 cups plus the 1/2 cup Bloody Maria Mix to make the same amount of liquid. 

3. Add in frozen vegetables and cook until the liquid is absorbed.
