Bloody Maria Rarebit Cheese

Rarebit, known also as Welsh Rabbit, is a vintage savory beer and cheese recipe served over toast, slightly similar to a fondue. It makes a great dip for fresh cut vegetables and chips.  It’s also is a great addition to nachos! 

Rarebit is made with Worcestshire sauce, some seasonings, beer, and an egg yolk.  Okay, it’s a little more complicated than that, but the combo of melted cheese and Bloody Maria Mix is a close match.  

We like to top our Bloody Maria Michelada Shrimp Tacos with this cheese for an extra level of flavor! 

Bloody Maria Rarebit Cheese

Colby Jack Cheese 1/2 cup
Bloody Maria Mix 1/2 cup

1. Melt together equal amounts of cheese and Bloody Maria Mix.  Serve right away.
